What tomato flavor is actually made of

Flavor is three things working together: sugars, acids, and aroma. The sugars and acids you taste on your tongue. The aroma is the larger and stranger part, a mix of roughly fifteen to thirty volatile compounds your nose reads as 'tomato', built by the fruit from fats, amino acids, and the same pigments that give it color.

Researchers who mapped tomato flavor compound by compound found that the varieties people like best are the ones that are sweet, balanced, and rich in a handful of those aroma volatiles. Color was not on the list of things that predict liking. It is one visible output of the fruit's chemistry, not the dial that sets the flavor.

Where color and flavor really do travel together

There is one place the color rule holds up. Some of a tomato's fruity, floral aroma compounds are cut directly from carotenoids, the orange and red pigments. So a deeply orange tomato tends to carry more of those particular notes, because the fruit made the pigment and the aroma from the same raw material.

This is why a Sungold or a big orange beefsteak so often reads as fruity and sweet. It is a real tendency, worth knowing. It is also only a tendency. The compound usually named is methyl salicylate, the wintergreen smell. The problem is that nothing in the research ties methyl salicylate to dark fruit. Its level is set by a variety's genetics, not by how purple or brown the skin is.

Worse for the myth, taste panels tend to mark a strong methyl salicylate note as a fault, not a feature. It reads medicinal, like wintergreen gum. The depth people love in a Cherokee Purple or a Black Krim is real, but it comes from a good balance of sugar, acid, and savory character, not from the pigment. Color and aroma are built by separate machinery in the fruit. The black tomato earns its reputation honestly. It just does not earn it through its color.

One thing color cannot survive: the fridge

If flavor has an enemy, it is the refrigerator, and this one is not a myth. When a ripe tomato sits below about 55 degrees Fahrenheit, around 12 Celsius, the fruit stops making its aroma volatiles. A 2016 study traced the mechanism: cold switches off the genes that build those compounds, partly through chemical tags placed on the DNA itself.
